ONIONS: Inhibit the growth of cancer cells, increase HDL cholesterol, help prevent colds, stimulate the immune system, fight inflammation, reduce diabetes risk, contain antibacterial and antifungal properties, contain sulphur and quercetin (which help neutralize the free radicals in the body).
LEEKS: Have ALL of the above properties, plus: Vitamin B6, Vitamin C, Folate, Manganese, Iron and Fiber.
Now for an amazing RAWGANIC CREAMY LEEK SOUP!
1 avocado
1 1/2 cup zucchini, chopped
2 celery stalks, cut in pieces
2 Tbsp. lime juice
2 tsp. mild white miso
1 whole leek “bunch” cleaned thoroughly, cut and discard top inch of leek stalk, and fuzzy bottom part
1 tsp Himalayan salt
Handful of fresh cilantro
2 cups water (may need slightly more)
Place all of the ingredients in a high speed blender and blend until smooth. Enjoy!
