This is an amazing detox healing soup recipe from the Gerson Institute, which they use for their cancer patients. It is full of antioxidant rich vegetables, simmered for three hours. Be sure to leave all the skins and peels on the vegetables (except for the garlic), because many of the minerals and nutrients are stored directly beneath the skin. Try to consume this soup within the first 48 hours of making it for maximum benefit.
INGREDIENTS:
- 2 small fresh organic leeks
- 6 carrots, peeled
- 1 pound fresh organic potatoes
- 3 large organic tomatoes
- 2 quarts pure water
- 1 large organic onion
- 4 stalks celery
- 2 garlic cloves
- 1 handful parsley
- 1 tsp Himalayan salt
Scrub your vegetables, and put them all together in a large soup pot. Cover and cook on low heat for 3 hours with water. Let the soup cool before storing. Store any extra soup in an airtight container in the refrigerator.
