This quinoa oat porridge is a perfect breakfast, loaded with protein, fiber and the important Omega 3’s. So often in the morning we rush around and don’t feel like we have the time to make a truly nourishing breakfast to start our day. But this recipe can be made the night before, so that it is ready for you in the morning! Enjoy. This serves 2-3 people.
Ingredients:
- 2 cups almond milk
- 1/2 cup quinoa, rinsed
- 1/2 cup gluten free oats
- 1/4 teaspoon Himalayan salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup flaxseeds, ground
- 1/4 cup cacao nibs
Directions:
- Combine the almond milk, quinoa, oats, salt, cinnamon, and nutmeg in a small pan on medium heat. Stir and cook for 5 minutes. Lower heat, cover and cook for 10 more minutes. Remove from heat and stir in the ground flax.
- You can eat immediately, and top with cacao nibs and maple syrup.
- If you are making this for tomorrow’s breakfast, let porridge cool and transfer to a container with secure fitting lid and refrigerate. Warm quickly in a saucepan with 1/2 cup of nutmilk. Top with cacao nibs and maple syrup.
