Ingredients
1/2 cup coconut butter
1/4 cup coconut oil
1/4 cup plus 1 tablespoon raw cacao powder
3 Tablespoons coconut sugar
1/2 tsp cinnamon
1/4 tsp chipotle chili (if desired)
small pinch of Himalayan salt
Shredded coconut flakes and cacao powder for coating.
Coconut butter is an actual food that contains protein, carbohydrates and fat. It is the blended meat of the coconut, in the same way that almond butter is the blended meat of almonds. Coconut oil, by contrast, is pure fat. Using a combination of coconut butter and coconut oil make these truffles extra creamy and decadent.
Mix all of your ingredients together in a food processor, or by hand. Roll into balls and then in coconut or cacao powder. If you are in a warm climate, these should be refrigerated to avoid melting.
