This is a winner. I’m always looking to create super easy, delicious, low-fat recipes that are new and different and don’t require massive lists of ingredients. This cake I made this morning, and enjoyed by the pool this afternoon, is incredible. I know you’re going to love it.
The lemony-creamy middle layer is the perfect compliment to the chewy chocolate base, and the blueberry layer adds a sweetness that rounds it off. I LOVE my chocolate date frosting, and since I already had a container of it in the refrigerator, I added a big scoop on top. Totally optional but worth it
BASE:
- 1 tbsp raw pecans (can use any nut)
- 1 tbsp hemp seeds
- 3 medjool dates, pitted
- 2 tsp raw cacao powder
Process in mini-food processor until well mixed. Press into bottom of small round mold.
BANANA LEMON CREAM LAYER:
- 2 large organic frozen ripe bananas
- 1 tbsp soy lecithin (perfect for choline, also keeps ice cream creamy even after you freeze it, but it’s optional)
- 2 tbsp organic lemon juice
Blend until smooth in high powered blender.
BLUEBERRY SAUCE LAYER:
- 3 dates, pitted
- 1/4 cup blueberries
Blend until smooth in high powered blender.
(optional) CHOCOLATE CREME FROSTING
To make a batch of chocolate creme frosting, I use about 1 cup of soaked dates, pitted, with 1/4 cup raw cacao powder and process in the food processor until smooth and creamy. My favorite dates for this frosting are Khadrawy, but feel free to use the more common Medjools or any other type you have on hand. (You DO have dates on hand don’t you???)
If you have trouble getting it to blend (I use super fresh dates that are soft to begin with, and I soak them for about 2 hours), then you can add a small amount of coconut water or regular water. I like the consistency of spreadable icing, but you can thin it out even more if you want it to be more like a sauce that you pour over the top. It’s a personal thing!
Health-wise, this amazing single serve cake is loaded with magnesium (from the chocolate and the dates), potassium, Vitamin C, protein (from the pecans and hemp) and many more important nutrients. Healthy enough for breakfast, lunch, dinner or dessert and awesome any time.
