These are in all honesty, one of my top favorite treats of ALL TIME, raw or not raw! They are just so delicious. Seriously, I can’t even keep them in the house between my kids, their friends and my husband! Every time we make a batch the family descends on the platter like they’ve never had a treat before!
Most people have no idea that they are high raw, vegan and made with healthy ingredients. We almost always have raw chocolate bars in the refrigerator or freezer, and that’s what I break up to use as the chips. If you don’t, simply use any vegan chocolate chips you have.
Ingredients
- 1 cup cashew flour (just grind raw cashews to a fine powder)
- 1/2 cup +2 TBSP Rolled Oats (ground into flour)
- 1/2 cup walnuts chopped
- 1/3 cup Coconut Nectar (can sub Maple syrup)
- 1 tsp Vanilla
- 1/2 tsp cinnamon
- 1/2 tsp Himalayan Salt
- 1/4 cup Vegan Chocolate Chips chopped
CHOCOLATE COATING
- 1/4 cup cacao powder
- 1/4 cup coconut oil melted
- 2 TBSP coconut nectar (or maple syrup)
Combine all ingredients together in a bowl with your hands, until well mixed. Form into a large ball, wrap with wax or parchment paper and freeze for 30 minutes. In the meantime, make the chocolate coating. Mix cacao powder, coconut oil and coconut nectar in a bowl with a fork until smooth. Set aside. Take cookie dough from freezer, and using a mini-ice cream scooper, scoop the dough into balls on a parchment lined cookie sheet. Take each ball into a spoon, and dip into the bowl of chocolate coating. The chocolate coating should begin hardening right away. Enjoy! Store in the freezer in an airtight container.
